Recipe - Frozen Yoghurt Bark

Yoghurt bark is creamy, refreshing and effortlessly healthy. Scattered with berries and pistachios it provides a nutritious sweet satisfaction, without the sugar crash. Minimal ingredients, minimal time, no fuss.

Great as a healthy alternative to ice-cream

Ingredients

500g full-fat (5%) Greek yoghurt (or plain non-dairy alternative)

150g frozen or fresh berries - blueberries, raspberries, redcurrants, strawberries

40g pistachios - chopped

1 tbsp Canadian maple syrup


  • Line a large baking tray with grease-proof paper. Spread the yoghurt over the paper evenly

  • Scatter with the nuts and berries

  • Freeze for 2 hours or until solid

  • Peel away the paper carefully, and break the yoghurt bark into large shards.

  • Store in a large sealed container. Keeps in the freezer for up to 3 months.


Experiment with different berries and nuts. Add small chunks of dark chocolate for extra decadence!
