Recipe - Easy Chia Seed 'Jam'

Forget the sugar-laden supermarket stuff — this quick and easy jam alternative is a winner. Packed with gut-loving fibre and antioxidant-rich berries, it’s a spread that actually does your body some good.

With just the right touch of maple syrup to bring out the fruit’s natural sweetness, it’s a blood-sugar-friendly way to jazz up your toast, crackers, or yoghurt. And the best part? It takes 10 minutes (yes, really) and uses budget-friendly frozen berries. So not only is it delicious, but it also gives store-bought jam a serious run for its money!

Ingredients

2 cups frozen berries of choice (I like raspberries or blueberries)

2 tbsp chia seeds

1 tbsp maple syrup (this is optional, for those wanting a sweeter taste)

  • Heat berries in a small pan over a medium heat, stirring occasionally until thawed and juicy (about 5 minutes)

  • Mash berries with a fork to a pulpy consistency

  • Add chia seeds and stir in thoroughly. Add the syrup if using. Now turn off the heat and allow to sit for 5 - 10 minutes to thicken

  • Transfer to a glass sealable container and store in the fridge. The ‘jam’ will continue to thicken, so loosen with a dash of water or lemon juice if needed.

  • Will keep for up to 1 week (mine is usally gone within days!)

Enjoy on wholegrain sourdough toast, with oatcakes, or mixed in yoghurt.
